After signing, May made his professional debut with the Arizona League Dodgers. He spent the whole season there, going 0-1 with a 3.86 ERA and 34 strikeouts in 3023 innings pitched. In 2017, he played for both the Great Lakes Loons and the Rancho Cucamonga Quakes. In 25 games (24 starts) for both teams, he had a combined record of 9-6, an ERA of 3.63, and a WHIP of 1.15. In 2018, he was chosen to be on the all-star team for the Quakes in the California League. On September 14, he started the playoff game that won the title for the Drillers.
